I love the banana bread, it is a cake that I often make for a finish of ripe bananas and I enjoy it for sure ! But here, I wanted to do this in version vegan, with the addition of usual, pecans and a glaze of maple syrup (oh it is good it sticks to your fingers !)… This version is just a killer, you would have seen my face when I tasted the first piece… (well not better not, because I believe that I was not wearing !)… the ecstatic !!!

As you say, that it was quickly devoured and enjoyed by Mr. and I !!! Well, yes it would be a shame for it to dry anyway !

I believe that I have nothing to say more… I leave you with so much delicacy !

Banana bread with pecans and maple syrup {vegan}

Ingredients (for a cake)

  • 100 g of flour
  • 30 g of corn starch
  • 3 bananas
  • 100 g of applesauce
  • 50 g maple syrup
  • 50 g pecan
  • 30 ml of grape seed oil
  • 1/2 packet of yeast chemical
  • 1 c. c. of baking soda

For the frosting

  • 50 g of icing sugar
  • 50 g of maple syrup (type brown)


Preheat the oven to 180°.

Put the flour, cornstarch, baking powder and baking soda in a bowl.

Mash bananas using a fork and add to the flour. Then add the rest of the ingredients in the bowl. Mix without too much work the dough and pour into a cake pan with non-stick or greased-floured surface.

Bake for 35-40 minutes.

Let cool 10 minutes then remove from pan.

To prepare the glaze, heat the maple syrup, remove from the heat and add the icing sugar. Pour over the cake once cooled and add a few pecans on top.
