Today Mini-Mademoiselle is celebrating its 1 year… 1 year of happiness, 1 year ago, this little baby has changed our life, 1 year that I am mom. Happy birthday my little angel. I just wanted to offer him a nice cake for your special day, this one was for another occasion, but it could have been for her. Today my mind is far too busy to write you a few lines I leave you with this cake…at the same time I think it speaks for itself, non ?!

Just go a few explanations for this banana layer cake : a foundation of banana bread with pecans, icing, vanilla and a hint of caramel sauce… that happiness !

Banana layer cake with caramel {vegan}

For 10 -12 people Save Print Ingredients

  • 200 g of flour
  • 60 g of corn starch
  • 5 bananas
  • 200 g of applesauce
  • 100 g of maple syrup
  • 100 g of pecans
  • 60 ml of grape seed oil
  • 1 sachet of chemical yeast
  • 2 teaspoons of bicarbonate of soda
  • FOR THE FROSTING
  • 400 g of margarine plant
  • 300 g of icing sugar
  • 3 tablespoons of plant milk
  • 1 good pinch of vanilla powder
  • The caramel sauce

 

Preparation

  • Preheat the oven to 180°.
  • Put the flour, cornstarch, baking powder and baking soda in a bowl. Mash bananas using a fork and add to the flour. Then add the rest of the ingredients in the bowl. Mix without too much work the dough and pour into a round mould 17 cm diameter anti-adhesive.
  • Bake for 35-40 minutes.
  • Remove from pan and let cool completely before you cut the cake into three disks
  • During this time prepare the frosting by beating the margarine with the icing sugar and the vanilla, in order to obtain a mixture smooth and fluffy. Add the plant milk and continue to beat for 30 seconds.
  • Start by laying a disk of cake on a dish and then topped with an inch of frosting. Cover with another disk and then repeat the operation until the end. Cover the layer cake with a thin layer of frosting (one can almost see the cake through) then refrigerate for 30 minutes.
  • Finish by applying the rest of the frosting evenly on the cake.
  • Cover with caramel vegan (recipe to come !).

 

Decorate with pecans on top.
