A tartare with autumnal colors with pear and roasted hazelnuts that my mother prepared us.

Beef tartar with pear and hazelnuts

Ingredients (for 2 people)

  • 150 g fillet of beef
  • 1 half pear-not too ripe (the Williams)
  • 2 tablespoons of toasted hazelnuts chopped
  • 2 tablespoons of hazelnut oil
  • 1/2 c to c of white balsamic vinegar
  • Fleur de sel
  • Pepper
  • Espelette pepper


Trim the beef fillet with a knife to form small cubes and then do the same with the half pear.
Put the cubes in a bowl and add the hazelnut oil, balsamic vinegar, salt and pepper and a pinch of Espelette pepper, mix well.
Then add the crushed hazelnuts.
Make with a circle and add a slice of pear for garnish and it is ready.
