A tartare with autumnal colors with pear and roasted hazelnuts that my mother prepared us.
Beef tartar with pear and hazelnuts
Ingredients (for 2 people)
- 150 g fillet of beef
- 1 half pear-not too ripe (the Williams)
- 2 tablespoons of toasted hazelnuts chopped
- 2 tablespoons of hazelnut oil
- 1/2 c to c of white balsamic vinegar
- Fleur de sel
- Espelette pepper
Trim the beef fillet with a knife to form small cubes and then do the same with the half pear.
Put the cubes in a bowl and add the hazelnut oil, balsamic vinegar, salt and pepper and a pinch of Espelette pepper, mix well.
Then add the crushed hazelnuts.
Make with a circle and add a slice of pear for garnish and it is ready.
