This week it was mardi-gras (which you were not aware ?!) so for latecomers like me, here’s a fritter recipe carnival coming straight of Austria, I named the Osont (my wishes !). By in we are, instead, the bugnes that is cooking for this occasion but this year I fell for a recipe while moeullositée (what ? it doesn’t exist moeullositée !!! so much the worse !), with the right jam inside and icing sugar on it…yes I know, it is what it is !
Come on, you fart is the fryer, and it is a delight for small children as well as for big kids like us !!!
Beignets de carnaval – Osont
Ingredients (for twenty)
- 500 g of flour
- 2 whole eggs
- 2 egg yolks
- 60 g of butter
- 50 g of icing sugar
- 1 cube of yeast
- 25 cl of milk
- 1 pinch of salt
- 6 c. s. of red fruits jam
- Vegetable oil for frying
Let cool 10 cl of milk and then add the yeast into pieces. Let stand for 10 minutes. Then add 150 g of flour and then knead until it forms a nice dough. Let stand, covered, in a warm place 20 minutes.
Add the whole eggs, the yolks,the sugar, the rest of the flour and the milk, the butter in pieces and salt, then knead the dough to obtain a dough well smooth. Let sit for 30 minutes covered.
Dégazez the dough with the fist, and then form a score of balls. Leave again to rest the dough, covered, for 45 minutes, they should double in volume.
Heat the oil to 160°.
Put the fritters in the pan so they take on a nice colour on both sides.
Cool make a pre-hole on the side with a socket and then fill with jam using a long tubular sleeve.
Sprinkle with powdered sugar before serving.
Has devour the day because it really is the best !!!
