Today is the feast of the great mother and this year and very special for my mom and my step-mom, because it is their first grandmothers day with the arrival of Mini Miss ! So to celebrate all this we made farting party favors, fireworks, the champagne is an excellent aperitif with these bites of foie gras !!! And for this occasion, I discovered the fatty liver the love in the cage of the Countess du Barry who seduced me.

Gingerbread and citrus fruits declined and candied jelly with a hint of Espelette pepper to make it a bite that will be able to amaze all the grannies !!!

Bites of foie gras, gingerbread and citrus fruits

Ingredients (for 6 pieces)

  • 1 terrine of foie gras
  • 3 slices of gingerbread house
  • 2 oranges
  • 1 pinch of Espelette pepper
  • 1/4 c. c. of agar-agar
  • The candied kumquats
  • 1 pinch of fleur de sel


Make the jelly from orange, to do this, press the oranges and put the juice on to boil in a saucepan with the agar-agar and the Espelette pepper. Bring to a boil 1 minute and turn the jelly on a small plate filmed and then allow to cool 15 minutes.

Make 6 balls with the foie gras and refrigerate.

Cut the slices of spice bread using a cookie cutter to form 6 small circles. Remove the jelly from the fridge and do the same.

Make a breadcrumbs with the fall of gingerbread, for this mix with the salt and roll the foie gras in it.

Assemblies mouthfuls, starting with the ginger bread and then the jelly in the orange, then add the foie gras and the candied kumquats, finish stitching all on a picnic.
