There is not so long ago, I had proposed a recipe of tzatziki home super easy to make, but I didn’t say with what to eat (well I’m still sure that you responded !) !!! Thing repaired today with these blinis with buckwheat flour in the mini version for the aperitif. Ok, if you don’t have the courage you can always make them bigger but I find that these little bites are too much mimis !!!

Come on, it’s still a good excuse to take a drink, non ?!

Blinis with buckwheat flour

Ingredients (for two dozen mini blinis)

  • 150 g buckwheat flour
  • 30 g of butter
  • 2 eggs
  • 20 cl of milk ribot (fermented milk)
  • 10 cl of milk
  • 1 sachet of chemical yeast
  • 1 pinch of salt


Mix together all the dry ingredients that are flour, yeast and salt.

Melt the butter then beat the eggs with the milk ribot and then add the melted butter. Mix the two preparations using the spatula without overworking the dough.

Heat a little oil in a frying pan, and then assemble the blinis, adding spoons of batter into the latter. Let it cook at medium heat for about 2 minutes, until small bubbles appear on the top. The return of your blini and cook on the other side for about 30 seconds.

Continue until exhaustion of the paste.

Leave to cool and serve with tzatziki, a good aperitif !!!
