Breast of duck with raspberries
Ingredients (for 2)
- 2 small duck breasts
- 125 g of raspberries, including ten reserved
- 15 cl of raspberry vinegar
- 1 c to s of sugar cane
- Salt and pepper
Salt and pepper the duck breasts on both sides.
Nick the skin of the duck breasts and put them to cook on the skin side in a frying pan over medium heat for 5 min then flip side flesh for 2 min. Drain the excess grease, and then repeat the cooking on the skin side for 5 min covered, then turn up the heat so that the skin of the duck breasts takes a beautiful stain.
Once cooked, reserve the duck breast in a covered container.
During this time, deglaze the frying pan with the raspberry vinegar and let reduce over high heat for 1 minute, then add the sugar and the raspberries. Turn down the heat, mash slightly the raspberries and leave to cook until you obtain a syrupy consistency, adjust the seasoning.
Cut the duck breasts into slices and then add the meat juices to the sauce with raspberries.
Serve the duck with the sauce and garnish with a few fresh raspberries.
