So I invite you to discover this small dish full of vegetables and legumes, bulgur with beans and swiss chard spinach. The haulms of all kinds and chard point finally the tip of their nose to the stalls, so we took advantage and cooking small dishes with to eat healthy. Today at the market I have also seen the first organic strawberry local and I didn’t see them elsewhere… but that is another topic !

Let’s go back to our small dish of bulgur wheat, I have personally used the pre-cooked full but you will do as seems good to you, it will do nothing to change the chmilblick !

Bulgur with beans and chard spinach {vegan}

For 2 people Save Print Ingredients

  • 150 g bulgur wheat
  • 2 handfuls of dried beans (here borlottis)
  • 2 carrots
  • 1 small bunch swiss chard spinach
  • 1 onion
  • The juice of half a lemon
  • 1 pinch of thyme
  • 1 drizzle of olive oil
  • Salt and pepper

 

Preparation

  • The night before, soak the beans in cold water.
  • The next day cook the beans in boiling water for about 30-40 minutes (this depends on the variety used).
  • Cook the bulgur as indicated on the package.
  • Snip the onions and carrots into cubes.
  • In a skillet, heat a drizzle of olive oil then add the onions and carrots. Sauté 10 minutes over medium heat, stirring. Then add the swiss chard spinach and baked beans. add the thyme, lemon juice, and season. Continue cooking 3-4 minutes.
  • Mix the vegetables with the bulgur and serve.
