Ah Easter… the chocolate, chocolate, and even chocolate ! Yes, but the chocolate is good, but we will all make it a indigestion, then I expected the buns to hide in the garden (or in the house) and not any buns, buns rabbit ! Mignonitude assured, I have also made the test on Mini Miss 2 1/2 years at the exit of the nursery, and she has adopted ! And you’re going to tell me why a brioche saffron (or not) ? Well, it is because it is the tradition of Easter with our friends in Spanish, Portuguese and brazilian, and as I love to find out what is done elsewhere I started (not by the window huh !!!). In short, the saffron brioche, I had never tried it and it works perfectly and then it also gives a lovely colour yellow to its lapinoux.

The slight worry with the smaller buns is that it dries quickly, it is best to eat them the same day, but correct me if I’m wrong, I think it is not really a problem they will be quickly devoured ! Happy Easter my lapinoux !

Buns rabbit with saffron {without milk}

To 12 rabbits Save Print Ingredients

  • 550 g flour T65
  • 150 g of margarine plant
  • 100 ml of vegetable milk warm
  • 4 eggs + 1 egg for eggwash
  • 100 g of cane sugar
  • 1 sachet of baker’s yeast or 1 cube
  • 1 dose of saffron pistils
  • 1 pinch of vanilla powder
  • 4 g salt
  • Beads of sugar colorful


  • For the brioche, mix the yeast with 2 tablespoons warm water, let stand 10 min.
  • Put the milk to warm with the saffron pistils.
  • Put the flour into a bowl, make a well and add the yeast. Work the dough between your fingers and add the eggs previously beaten, warm milk, sugar, vanilla and salt. Knead the dough, stretch it and then add as the margarine into pieces. Knead the brioche dough until it comes off of the bowl. You can transfer on the workplan for ease of use.
  • Let the dough rise in a warm place and covered, for 3 hours.
  • Dégazez the dough with the fist and then form into 12 dough pieces of 90 grams, and 12 of 20 g.
  • Train the rabbits, for it form into a coil along with the bigger of the dough and form a “alpha”; Boulez the smaller dough pieces and have the ball in the center of the “alpha”, you have your rabbit.
  • Arrange the buns on a baking sheet and then leave again to rise for 30 minutes in a warm place.
  • Preheat the oven to 200°.
  • Bask rabbits in the beaten egg and then place balls of sugar-coloured eyes and nose, you can even decorate his belly !
  • Bake for 15 minutes.
