A cheesecake the French way lighter than that of neighbouring anglo-saxons, which reminds us of our childhood memories.
Cake cheese white way meal
- 500 g of cottage cheese drained
- 6 small swiss
- 5 eggs
- 200 g of sugar
- 5 tablespoons of cornflour
- The zest of a lemon
For the pastry
- 200 g of flour
- 100 g of butter
- 1 egg yolk
- 1 c to c of sugar
- 5 cl of water
For the dough, mix all the ingredients except the water that you’ll add as to obtain a soft dough and then refrigerate.
Roll out the dough in the tin.
Preheat the oven to 180°.
For the cream cheese, mix in a bowl the cottage cheese, yogurt, 100 g sugar, the egg yolks, the lemon zest and the cornstarch.
Beat in the snow the egg whites and then add the rest of the sugar.
Incorporate the whites to the cream cheese then pour over the dough.
Transfer to the oven and bake for 1 hour and 15 min.
