Kumquats are small citrus fruits with elongated shape, that you eat whole with the skin and the taste of bitter orange, but I am sure that I do teaches you nothing ! So, why not into pickles to make them more soft !
It is definitely A must with the rice in the milk with the semolina in the milk, a good plain yogurt (homemade is better !) or even with crackers.
Candied Kumquats in vanilla
Ingredients (for a small pot)
- 250 g kumquats (organic preferably)
- 200 g of cane sugar
- 25 cl of water
- 1 vanilla pod
Wash the kumquats and cut into slices removing the seeds (there may y be many of them !).
Put water to heat in a pan and then put the kumquats in to boil for 5 min, repeat once, this will remove their bitterness.
Drain the kumquats and then prepare the syrup.
To do this, mix the sugar and 25 cl of water in a saucepan, bring to a boil, add the grains of vanilla bean that you have scraped (keep the pod for another recipe, such as the infuse in the milk for rice milk or put it simply in a jar of sugar for the flavour !) then add the kumquats.
Cook over low heat 20-25 minutes so that the syrup reduces.
Put the preparation in a pot and keep cool.
