When you don’t really have the time to cook or we just can’t spend hours in front of the furnace, which is not bad in my case these last few months with Mini-Mademoiselle, and we find solutions to make good and fast and hassle-free by the way ! It is in these moments that I pull out my map of the vegetables roasted in the oven, and here I offers you some carrots and parsnips with a little sauce of garlic, parsley and olive oil to accompany these good vegetables. The result is based, tasty and good garlic, then, do you rather have kisses before eating !!!

And then you’ll always have the time to do something else while it cooked !

Carrots and parsnips roasted in olive oil, garlic and parsley

Ingredients (for 2 people)

  • 6-8 carrots of different colors
  • 4 parsnips,
  • 3 tbsp olive oil
  • The juice of half a lemon
  • 1/2 bunch of parsley
  • 3 cloves of garlic
  • Salt and pepper

Description

Preheat the oven to 190°.

Wash and cut carrots and parsnips into two or four in length according to their size. Arrange in a baking dish, season and bake for 30 minutes.

During this time mix roughly together the parsley, garlic, olive oil and lemon juice to form a sauce.

Remove the vegetables from the oven and pour the cold sauce over top.

Enjoy without waiting.
