There are still a lot of tomatoes in gardens and it is still great to be able to enjoy this vegetable before the arrival of vegetables of the fall. At the market I found beautiful tomatoes and multi-coloured varieties are different so I wanted to cook with the chicken.

I love this way of cooking the chicken because the tomatoes caramélisent and, with the basil and garlic confit, give an incomparable flavor to the roast chicken.

Serve this dish with good fresh pasta and you will be satisfy !

Chicken thighs roasted with tomatoes, garlic and basil

Ingredients (for 2)

  • 2 thighs a chicken outdoor
  • 4 tomatoes of different varieties
  • 1/2 head garlic (purple for me)
  • 1/2 bunch of fresh basil
  • 1 drizzle of olive oil
  • Salt and pepper


Preheat the oven to 210°.

Arrange the chicken in a baking dish, add salt and pepper and massage it with a drizzle of olive oil.

Wash and cut your tomatoes into quarters. Snip the basil and mix the two before layering in the dish.

Separate the garlic cloves but leave the skin and add to the dish.

Bake for 45 minutes so that the chicken is well grilled and remember to baste occasionally with the cooking juices.
