Chocolate Mousse with mascarpone
Ingredients (for 4-6)
- 200 g of good dark chocolate
- 100 g mascarpone
- 3 eggs
- 10 cl of whipping cream
- 20 g of butter
- Bitter cocoa powder (for the service)
Melt the chocolate with the butter in a bain-marie or in the microwave and let cool the mixture. Then add the egg yolks and mix to obtain a mixture smooth and shiny.
Take up whites in snow and incorporate the chocolate with the white of eggs at one time, mix well.
With a whisk, mount together the mascarpone and the cream to obtain a mixture sparkling-type chantilly, for this reason it is necessary that the two elements are very cold.
Then add the mixture cream-mascarpone and mix gently.
