What name do you said may be nothing, but it represents for me a real recipe from childhood that I cooked for my parents. Of lamb chops, potatoes and onions which are stewed in white wine, it leaves you the same time to prepare a dessert !

Chops Champvallon

Ingredients (for 6)

  • 6 lamb ribs
  • 1 kg of potatoes
  • 2 large onions
  • 60 cl of dry white wine
  • 30 cl of water
  • 50 g butter
  • 1 clove of garlic
  • 1 bay leaf
  • 1 c to s of fresh thyme
  • Salt and pepper

Description

Cut the onions into strips and made melt them in 30 g butter over low heat in a frying pan and set aside.

Melt the remaining butter in the frying pan and fry over high heat the lamb ribs without the cook, and then deglaze with half a glass of water and book.

Cut the potatoes into thin slices, by hand or with a mandolin.

Preheat the oven to 180°.

At the bottom of a casserole from the oven, place the onions, lamb chops and their juice, then add a clove of garlic into pieces, the thyme, the bay leaf, torn, salt and pepper.
Cover of potatoes, that you assaisonnerez between each layer, and sprinkle with water and white wine.

Put in the oven, covered, for 1 hour 15 minutes cooking.
