With the (unbearable) heat that he is with us, the menus of the moment, are composed only of cold things like salads. Good, as this is not a soup believed, it was necessary to heat the casserole but it’s for a good cause, because the result is really living up to my expectations.

You can simply accompany this soup with a good slice of your goat’s favorite and there is just happiness !

Then it is not beautiful life ?!

Cold soup of zucchini with olives and basil

Ingredients (for 4-6)

  • 1 kg of zucchini
  • 100 g of pitted green olives
  • 1/2 bunch of basil
  • 1 clove of garlic
  • 50 cl of water
  • 1 drizzle of olive oil
  • nutmeg
  • salt and pepper


Wash and cut the zucchini into cubes, then heat a drizzle of olive oil in a casserole dish. Add the zucchini and the crushed garlic clove. Cook 3 min over high heat, stirring frequently.

Pour the water, turn the heat down and leave to cook for 15 minutes. Once cooked, let cool the preparation.

Mix the soup with the olives and basil and then season with a little nutmeg, freshly grated, salt and pepper.

Enjoy well chilled.
