Here is a salad of winter that I love. I can’t tell you more, but this mixture of crunchy cabbage, carrot and onion delights my taste buds with each bite. While we tend to eat more and more soft, this salad is the remedy perfect to run our jaw and regale us of the good things raw.

The apple and the nuts add that little something extra that was lacking, perhaps (or not !) the coleslaw, but let your imagination walk and replace the apple with pear ! And why not add a little chopped parsley ?!

For the sauce, I preferred something lighter than the traditional mayonnaise, but you do what you want, it is only an invitation to change !!!

Coleslaw with apple and walnuts

Ingredients (for 4)

  • 1/2 white cabbage, or 1 small
  • 3 carrots
  • 3 apples
  • 1 small onion
  • A few walnuts
  • The juice of half a lemon

For the sauce

  • 1 yoghurt to the Greek
  • 1 tbsp of almond
  • 2 c. c. of mustard
  • 2 c. c. of cider vinegar
  • 1 drizzle of walnut oil
  • Salt and pepper


Slice the cabbage, onion, peeled and carrots previously peeled with a knife, a mandoline, or a robot. Put all in a bowl.

Cut the apples into thin wedges, citronnez-and add to the vegetables.

Add the walnuts.

For the sauce, mix together all the ingredients, pour it over the salad and stir.

Good salad !
