For the year-end holiday season here is a tasty recipe of cream of sweet chestnuts which can be enjoyed throughout the world.

Cream soup of chestnuts and foie gras

Ingredients (for 4)

  • A jar of chestnuts (about 400 g)
  • 25 cl of milk
  • 50 cl of water
  • 10 cl of liquid cream
  • 1 chicken broth
  • 60 g of foie gras or block of foie gras
  • Salt and pepper
  • Fleur de sel

Description

In a casserole, put the chestnuts (drained if needed), milk, broth and water to heat up.
Cook over a low heat for 10 min.

Mix with the cream, and adjust seasoning.
Add 20 g of foie gras into pieces and mix again.

Serve in bowls and add a slice of foie gras on top.
Sprinkle with fleur de sel and pepper.
