Crisp salad of winter vegetables with horseradish sauce

Ingredients (for 4)

  • 3 beets, multicoloured if possible
  • 1/4 kohlrabi
  • 2 carrots
  • 1/4 of black radish
  • 3 tablespoons of olive oil
  • The juice of half a lemon
  • 1 c to c of horseradish
  • 1 c to c of Espelette pepper
  • Fleur de sel

Description

Start by peeling potatoes and then make thin slices with a mandolin.

To prepare the sauce, mix the lemon juice and the horseradish and then add the olive oil and mix.
Mix the vegetables and the sauce.

Keep in plates and add the Espelette pepper and fleur de sel.

Good salad !
