Elisenlebkuchen – buns of spices with dried fruit {Recipe Christmas #4}

Ingredients (for 40)

  • 180 g almond paste (marzipan)
  • 150 g of almond powder
  • 150 g hazelnuts, coarsely chopped
  • 80 g of candied orange, chopped
  • 60 g of candied lemon, chopped
  • 4 egg whites
  • 2 eggs
  • 80 g of flour semi-complete
  • 50 g of sugar cane
  • 3 c. c. of mixture 4 spices
  • 2 pinch of cinnamon
  • 1 pinch of salt
  • 100 g of walnuts

For the chocolate frosting

  • 150 g of chocolate
  • 50 g of sugar
  • 8 cl of water


Preheat the oven to 170°.

Grate the almond paste and then add the sugar. Mix with the help of a robot.

Then add the egg whites one at a time and then the whole eggs, continuing to whisk.

Then, put the flour, salt and spices and candied fruits. Finish by adding the almond powder and the chopped hazelnuts, mix well.

Pour the preparation into a piping bag then on a baking sheet covered with baking paper, form circles of 4 cm diameter. Wet your fingers with water and smooth out the surface of the Elisenlebkuchen. Finally, add a kernel of the nuts from above.

Bake for 15 minutes.

Leave to cool then prepare the frosting by making a sugar syrup with water and sugar to which you add off the heat the chocolate in pieces. Then dip the Elisenlebkuchen in and reserve on a baking paper. Let freeze 3 hours.

Enjoy with a good tea, but if you don’t eat everything immediately, the Elisenlebkuchen be stored for 10 days in a box.
