The sun is back with us and it touched my heart to present to you a salad recipe that I love, the fattouch. The fattouch or fattouch is a salad of lebanese origin with toasted bread, a bit like the panzanella for the Italian version.
The ingredients of the salad fattouch may vary but there is usually tomatoes, cucumber, salad, onion, parsley, sumac, olive oil, and toasted bread. I present to you here a recipe for fattouche my way but you are also free to modify the recipe according to your wishes !
It is an opportunity or never to take advantage of the latest cucumber and tomatoes and boots radishes before fall sets in !
Fattouch, a lebanese salad grilled bread and vegetables
Ingredients (for 4)
- 3 tomatoes
- 1/2 cucumber
- A dozen radishes
- 2 small onions, cébette
- 1/2 bunch of parsley
- 1/2 bunch of mint
- The juice of half a lemon
- 1/2 baguette detailed in cubes (or 2 patties in Arabic bread)
- 1 clove of garlic
- 1 drizzle of olive oil
- 1 tbsp sumac
- Salt and pepper
Preheat the oven to 180°.
Mix in a good drizzle of olive oil and a clove of crushed garlic in a bowl and then add the breadcrumbs, mix well to coat the pieces.
Put the croutons on a baking sheet and cook until browned about 6-7 minutes. Book.
Wash and cut the cucumber into half slices. Cut the radishes into slices and tomatoes into cubes.
Snip the onions, keeping the green part. Wash and snip finely the parsley and the fresh mint.
Mix together all vegetables and herbs.
Emulsify together the juice of lemon and a good drizzle of olive oil, salt and pepper and pour this sauce over the salad. Sprinkle with sumac, and add the bread just before serving so that it softens not.
