We all had bananas too ripe in his basket of fruit which we do not know what to do because nobody want to eat them ! So to solve this existential problem (yes, yes, yes, I did say existential !!!), I would like a solution rather greedy… small moss in maple syrup to serve with good caramel salted butter house…Yum !

Foam bananas with maple syrup and caramel with salted butter
Ingredients (for 6)
- 4 ripe bananas
- 400 g whipping cream
- 3 tbsp maple syrup
- 1/2 c. to c. of agar-agar
- The caramel salted butter
- A few slices of dried bananas
Heat 50 g of whipping cream with agar-agar in a saucepan, bring to the boil and reserve the mixture.
Mix the banana with the maple syrup and heated cream until the mixture is well aerated, then set aside.
Mount whipped the cream remaining, and then stir gently to the preparation of the bananas.
Divide the preparation into portions and allow to cool for at least 3 hours.
Serve with slices of dried bananas and caramel with salted butter house.
