Foams the cream of chestnuts

Ingredients (makes 6-8 jars)

  • 500 g of chestnut purée with vanilla
  • 40 cl + 10 cl of whipping cream
  • 1/2 c. to c. of agar-agar
  • Optional : 2 chestnuts


In a saucepan heat 10 cl of whipping cream with agar-agar. Bring to a boil and set aside.

Mix the chestnut cream to the whipping cream as it cools in order to obtain a homogeneous mixture.

Mount the rest of the whipping cream into whipped cream and then mix the two preparations by gently lifting the mass.

Divide into small jars and refrigerate for 2 hours minimum

Decorate with pieces of broken chestnuts before serving.
