What…! I never make focaccia house…!!! Bah not I admit it, mea culpa… I love it, but I always bought nature and I customisais at the discretion of my cravings at home. Okay, so I had to correct that ! So there I was launched to a focaccia with spring onions (yes, yes it was still in my basket of vegetables !) and fresh goat cheese because I have to say that there is a super producer to the market and I can’t resist !

Good, and then it is also a focaccia healthier version, whole wheat, as it is fun and we eat healthy and I have to say that there is nothing like home (long live the home-made, long live the home-made…!) !

All the focaccia !!!

Focaccia with spring onions and fresh goat cheese

Ingredients (for 1 focaccia average)

  • 250 g whole wheat flour
  • 40 g of olive oil
  • 13 cl of lukewarm water + 2 tbsp
  • 1 sachet of baker’s yeast
  • 1 c. c. of sugar
  • 2 g of salt
  • 1 bunch onion-fresh
  • 1 fresh goat cheese


Put the yeast, baker’s, sugar and two tablespoons of water in a ramekin and leave aside for 10 minutes.

Mix together the flour, salt and olive oil and then add the yeast mixture and the warm water. Knead for about 5 minutes to get a nice dough elastic. Place the dough in an oiled bowl, cover with a cloth and let stand at room temperature 30 minutes.

During this time, snip the onion in the length.

Dégazez the dough with the fist, then spread in such a way that rectangular. Leave to swell again 20 minutes covered.

Preheat the oven to 220°.

Make small indentations with your fingers on the dough and then add the onions and the goat into pieces. Drizzle with olive oil.

Bake for 20 minutes.

You can taste the focaccia warm or cold according to your desire and I think that it is the perfect accompaniment to a good soup !
