The fried zucchini flowers are for me a dish that you can enjoy as a privileged ! Fritters of zucchini flowers
Ingredients (makes 8 fritters)
- 8 zucchini flowers
- 2 eggs
- 50 g of flour
- 20 g of cornflour
- 10 cl of oat milk
- 1 pinch of Espelette pepper
- Salt and pepper
- 50 cl of vegetable oil
Beat the eggs with the salt and pepper and then add the flour. Mix the dough with the milk (it will take can be more or less to get a pancake batter thick). Add the Espelette pepper.
Heat the oil in a wok or a frying pan.
Wash the zucchini flowers and dry well. Dip in the batter and place in oil. Leave to cook for 1-2 minutes and flip (don’t let the oil too hot otherwise the fritters will burn).
Remove and let drain on absorbent paper.
Enjoy with the flower of salt.
