As every year, the month of January to celebrate the kings (and the new year), and it falls well because the end of the month is near ! Good as they say, better worth late than never and for me it is a tradition to present you each year with a galette des rois is different. You may be able to find a galette des rois with almond cream and a crown of kings brioche with orange blossom.

This cake, this is the fourth I’ve been preparing since the beginning of the month, then, to finish in beauty I have wanted a version a little different. Almond, of course, because I enjoy it, but also chocolate chips for the sweet tooth, all flavored with Grand Marnier…. hmmm…

And then do not like me some times, don’t forget the beans (yes here we shoot the king and the queen !) in the cake, you may be disappointed !!!

Galette des rois with almonds, chocolate and Grand Marnier

Ingredients (for a cake for 6 to 8 people)

  • 155 g of almond powder
  • 155 g butter, softened
  • 100 g of cane sugar
  • 3 eggs means + 1 yellow
  • 75 g dark chocolate chips
  • 4 cl of Grand Marnier
  • 2 rolls of puff pastry pure butter
  • 1 or 2 beans


Mix together the almond powder, the sugar and the butter cream using a spatula and without incorporating air, to form a mixture smooth and homogeneous. Add the eggs and mix. Then pour the Grand Marnier into the mixture and add the chocolate chips, mix. Put the preparation in a pocket socket.

Preheat the oven to 180°.

Spread the first puff pastry on a plate.Add the almond cream forming a snail and stop at 3 cm from the edge. Add the beans. Wet with water the 3 cm edge and just place the second roll of dough over top. Perform pressure to weld the edges of the dough.

Brush the cake brush with the egg yolk.Decorate then the edges and the top of the cake with the back of a knife.

Put in the oven for about 30 minutes so that the cake is well browned and it is ready.

So who will be the king this year ?!
