Ah the gnocchi… The gnocchi of potatoes yes, but the gnocchi incredibly light. Yes, yes, it is true that they are fried but it gives them the incomparable lightness (you have to taste it to believe it) ! This recipe to me, just my grandmother and I love it, Mr. I want them all the time !!!

Gnocchi di patate deep-fried
Ingredients (for 4)
- 4 large potatoes
- 3 c. s. dished flour + 4 tbsp for the work plan
- 2 eggs
- Salt and pepper
- Olive oil or sunflower oil
Cook the potatoes in a dress of the fields and then peel them.
Reduce the puree in a bowl and add the eggs one by one and the flour to get a smooth consistency and not too wet. Season the preparation.
Sprinkle your work surface with flour. With your hands take some of the preparation, roll it in flour and shape into a sausage. Repeat the process until all of the preparation. Cut the rolls into small sections and let dry for 10 min.
Put olive oil to heat in a frying pan, enough to fry the gnocchi. If you have a deep fryer, you can also use it. Fry the gnocchi for 3 minutes so they are golden brown and remove.
Serve as is, with the flower of salt and accompanied with a good big salad !
