I love cherries, but the cherries amarena it is a real sin of gluttony, then for fun there’s nothing like muffins with a touch of ginger to spice up the whole thing !
Muffins with cherry amarena and ginger
Ingredients(for 8 muffins)
- 240 g of flour semi-complete
- 75 g of oat flakes or other
- 80 g sugar
- 3 c to c of yeast chemical
- 1 tbsp of ginger powder
- 1 c to c of salt
- 150 ml of milk
- 115 ml sunflower oil
- 2 eggs
- 1 grated apple (about 220 g whole)
- 150 g of cherries amarena
- 1 piece of fresh ginger the size of a walnut (about 10 g)
- Brown sugar
Preheat the oven to 200°.
Mix the flour, sugar, yeast, oat flakes, and ginger powder together.
Peel and épépinez the apples and then grate it and mix with the flour to prevent oxidation.
Add the cherries without the juice to this preparation, as well as the grated fresh ginger.
In another bowl, mix the milk, oil and eggs together, then add the flour and mix without working the dough too, because it develops the gluten which will make the muffins more dry !
Divide the dough in to the moulds of the muffin.
Sprinkle with a little brown sugar.
Put in the oven for 20-25 min so that they are golden brown but still soft.
