Season the spinach is in full swing and the stalls of the markets are loaded with them, and then poof, like that, and a desire to muffins light and delicious to delight the taste buds of my fellow-mates bad’. And I think it has worked well, even if I suspect that love the recipes more gourmet, like that of a muffin with munster cheese, bacon, chives !!!
It is as always quite simple and simply good (rots this word game !!!)…anyway, even the children who don’t like spinach will die (finally I hope, because this muffin has not been tested on the young audience !) !

Muffins with spinach and parmesan cheese
Ingredients (for 12 muffins)
- 250 g of flour
- 15 cl of milk
- 8 cl of olive oil
- 2 eggs
- 100 g of parmesan
- 300 g of fresh spinach
- 1 sachet of chemical yeast
- 1 c. c. of baking soda
- Sesame seeds
- Salt and pepper
Preheat the oven to 170°.
During this time, wash the spinach and make a fallen with a drizzle of olive oil in a frying pan with the spinach. Sauté everything for 5 minutes, season, carve them finely and set aside.
Mix together the flour, baking powder, baking soda, salt, and pepper.
In another bowl, beat eggs with oil and milk.
Assemble the two preparations without too much work the dough and then add the spinach and the parmesan.
Pour the batter in the muffin cups anti-adhesive or buttered-flour. Pour a little of the sesame seeds on the top.
Bake for 25 minutes.
Enjoy warm or cold !
