I had, some time ago, found some beautiful kumquats at the grocery store organic, but my usual, I bought them without knowing what I will do really. Yes this is a great habit in me, so stuff can trainer weeks, months or even years in the closet before I do something. Good then don’t worry, I did not wait a long time before thinking of the perfect chocolate-citrus fruit, and muffins chocolate and kumquats. This is my first try of muffins chocolate, yes I had already done it with chocolate chips but never chocolate (yes it is a little cracking !). Good those are without gluten and without milk, perfect for breakfast or teatime or a desire, a break of chocolate, a lil low… Good, but of kumquats I had bought a lot, so expect to review in future revenues, and as I don’t eat that’s sweet (if if I assure you), it will be in salted recipes.

It only remains for me to tell you : your plates to muffins !!!

Muffins, chocolate and kumquats {gluten free – without milk}

For 12 muffins Save Print Ingredients

  • 200 g of wholemeal rice flour
  • 80 g of almond powder
  • 80 g cocoa powder
  • 3 eggs
  • 90 g of sugar full
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking
  • 5 g of fleur de sel
  • 20 cl of milk vegetable rice
  • 6,5 cl of vegetable oil
  • 10 kumquats
  • 100 g chocolate chips

 

Preparation

  • Preheat the oven to 180°.
  • Mix together all the dry ingredients are the flour, the cocoa, the sugar, the baking powder, soda and salt.
  • In another bowl beat the eggs then add the oil and milk. Add this preparation to the dry ingredients and mix.
  • Cut half of the kumquats into small cubes and add to the dough.
  • Add also 80 g of chocolate chips.
  • Pour the batter in muffin moulds and then finish by adding on top of the rest of the kumquats and cut into slices and chocolate chips.
  • Bake for 20 minutes.
