Mini mushrooms made me of the eye on the market and I have not been able to resist them ! I remembered that in my youth (oulala it is far away !) I loved the mushrooms at the Greek but I’ve never cooked.
Perhaps you will tell me, it’s not a little kitsch, like the recipe for the mushrooms à la grecque ???!!! But no, but no… it’s just a little past the mode (the 90’s) but it is good, so why deprive yourself ?!
I just hope to change your mind (more) recalcitrant (or recalcitrant) of you !!!
And then it is the good season to eat, we need a bit of freshness and flavours in our plates…
Mushrooms à la grecque
Ingredients (for 4-6)
- 500 g of mini mushrooms
- 25 cl of dry white wine
- 1 large tablespoon of tomato concentrate
- The juice of half a lemon
- 1 onion
- 1 c. c. of coriander seeds
- 1 bouquet garni (thyme, laurel, rosemary…)
- 1 pinch of sugar
- 1 drizzle of olive oil
- Salt and pepper
Peel and snip the onion into small cubes. Put to heat a dash of olive oil in a pan and fry the cube of onion 5 minutes over low heat.
Wash mushrooms and add to the onion.
Increase the heat, pour in the white wine and let reduce for 3 min.
Then add the tomato paste, the bouquet garni, lemon juice, coriander seeds and sugar and then simmer over medium heat for about 15 min. It is necessary that the juice has reduced to a syrupy sauce.
Season to your taste and leave to cool before eating.
