I love to make my blocks home and in addition to this is really simple. The perfect chicken liver is more known under the name of foam of chicken livers, but I have a little custom ! To make it even better here is a version with pink berries and jelly porto, hmm this is good !

Parfait of chicken livers to the pink peppercorns

Ingredients (for 5 mini terrines)

  • 300 g of chicken livers
  • 150 g demi-sel butter
  • 1 shallot
  • A score of pink berries and a little more for the decor
  • 3 bays of juniper
  • 20 cl of red port
  • 15 cl of white port
  • A few bay leaves to decorate
  • 1/2 c. to c. of agar-agar
  • Olive oil
  • Salt and pepper

Description

Snip the shallot, then put to melt in a pan with a drizzle of olive oil for 10 minutes on a low heat. Then add the poultry livers, increase the heat and allow to stain for 5 min, stirring frequently.

Add the juniper berries and pink peppercorns and then deglaze with the white port. Let reduce the mixture for 3-4 min and set aside.

Once the mixture of livers warm, place in a blender and add the butter. Sample preparation and adjust the seasoning if necessary.

Pour the batter into mini-terrines and refrigerate for 20 min.

During this time heat up the red port and agar-agar in a saucepan, bring to a boil for 2 min and set aside.

Pour the port wine over the mini terrines, add a few pink peppercorns and a bay leaf for the decoration. Put in the fridge for 2 hours minimum.

You can keep 5 days.

Enjoy with a good baguette !
