I still have a few zucchinis from the garden of my parents so I take advantage and I try to find small simple recipes and tasty. I love the zucchini because I think it is a vegetable that is very passe-partout (no no not the passe-partout de fort boyard see !) we can accommodate from a bunch of different ways and I never tire of it. So as the season comes to a close, I take advantage of it yet.
Here is a recipe for vegetarian patties of zucchini that I love to devour with a good raita.
Patties of zucchini with oat flakes and cumin.
Ingredients (for 2-3 people)
- 2 zucchini
- 1 egg
- 4 tbsp of rice flour full
- 20 g of small oatmeal
- 1 tbsp of cumin seeds
- 1 pinch of chilli powder
- Salt and pepper
- Of the coconut oil
Wash and grate the zucchini, sprinkle with a little salt, and let stand for 10 minutes, until the zucchini release.
Preheat the oven to 180°.
Squeeze the zucchini between your hands and place in a bowl. Add the beaten egg, the flour, the oat flakes, the cumin, the chilli and the pepper. Mix well.
Heat a little coconut oil in a pan and then pour a spoonful of batter into the skillet to form patties. Let cook 3 minutes then flip your patties. Let new 3 minutes and then have your patties on a baking sheet and bake for 10 minutes.
