The rhubarb that is a little my great passion of the summer, my fruit favorite because I love it. I caught pirating from constantly the plant, which is located at my parents house, and the poor thing has no time to recover ! So here’s a pie rustic rhubarb just perfect.
This is a pie that I love because it is simple and simply good (ok, no the game of words, I go out !). I add the almond powder which makes it soft (yes, because he must admit that it is a little acid on the edges, the rhubarb !) yum !!!
Pie rustic rhubarb
- 750 g of rhubarb
- 100 g of almond powder
- 65 g of sugar cane
For the dough
- 250 g of flour
- 150 g of butter
- 70 g of icing sugar
- 1 egg yolk
- a little water if necessary
To make the dough, mix together the butter, sugar and egg yolk in order to obtain a smooth mix. Then add the flour in one fell swoop, knead and form a ball. Book the dough cool for 1 hour.
Preheat the oven to 190°.
Wash the rhubarb and cut into sections of about 8 cm.
Mix in a bowl the almond powder and 2/3 of the sugar.
Roll out the dough until it has a thickness of 3-4 mm and place on a baking sheet covered with parchment paper, going in the oven. Add the mixture of almond sugar over the dough, leaving about 5-7 inches of dough on the edges.
Put the sections of rhubarb from above and then sprinkle the rest of sugar. Fold the edges of dough over the rhubarb and bake for 35 min.
Enjoy warm or cold.
