The vitelottes are potatoes that I find magic, their purple color is gorgeous (even if it fades a little during cooking) and to me is always a thrill (yes yes… it doesn’t take much for me to marvel at !!!).

The potato hasselback is a recipe that we come from the northern countries of Europe. After cooking, the potatoes are crispy on the outside and soft inside, just perfect ! The secret lies in the cutting of the potatoes, you will see it is a bit long and detailed but it is simple.

Potatoes vitelottes hasselback and flower salt pink

Ingredients (for 4)

  • 4 potatoes vitelottes
  • Olive oil
  • Flower of pink salt the recipe here


Preheat the oven to 220°.

Wash and slice the potatoes into thin slices of 2 mm, ensuring that you do not go to the end of the potato, but down low enough all the same.

Place in a baking dish and drizzle with a drizzle of olive oil.

Bake for 30 to 45 minutes depending on the size of the potatoes.

Serve with the pink salt.
