As you may have noticed, with Mr we eat more and more vegetarian and vegetarian does not mean boring, quite the contrary.

So, to make meals simple, quick and tasty there are thousands of possibilities. Today, nothing more simple, pumpkin, chick peas, spices and hop in the oven for a result that is tasty and healthy. I accompanied this dish of semolina couscous a little bit special, I promised to show you it as soon as tomorrow !

And if you do not have pumpkin, substitute the carrot for example !

Pumpkin and chickpeas roasted with spices

Ingredients (for 4)

  • 600 g pumpkin (butternut squash)
  • 250 g of chickpeas
  • 1 tbsp of cumin
  • 1 tbsp of cumin seeds
  • 1 c. c. of paprika
  • 1/2 c. to c. of cinnamon
  • 1 pinch of pepper
  • 1 drizzle of olive oil
  • Salt and pepper


Preheat the oven to 200°.

Peel and cut the pumpkin into cubes, rinse the chickpeas and put in a salad bowl.

Add the oil and spices, season and stir well.

Pour on a baking sheet and bake for 35 minutes. Stir from time to time.

Enjoy hot or cold.
