Oops !!! As you know, this is not the season of the jerusalem artichoke… too bad, it will give you ideas for next year or you can always use frozen ! The jerusalem artichoke, we love it with Sir, with his fine taste, artichoke, it can combine with flavors such as bacon, sage and why not hazelnut.

So here is a small mash, so simple and delicious.

Puree of jerusalem artichokes, hazelnut oil and bacon

Ingredients (for 2)

  • 400 g of jerusalem artichokes
  • 30 g of butter
  • 2 tablespoons of hazelnut oil
  • 2 slices of bacon
  • Salt and pepper


Preheat the oven to 200°.

Peel the jerusalem artichokes, plunge them into boiling salted water and cook for about 30 min (this will depend on their size).

During this time, grill the slices of bacon in the oven between two plates for 10 min, check the cooking, it is necessary that the bacon is crisp.

Once cooked, drain the jerusalem artichokes and place them in the mill vegetable (large grid) or mix them.

Then add the butter and the hazelnut oil to the mashed potatoes, mix well.

Serve with a slice of bacon on top.

Good mashed potatoes !
