The fresh spinach are almost always part of my basket of the week, yes, because Mini-Mademoiselle’adooooore the puree of spinach, but also because we do not pray to eat. It is a very simple recipe that I propose you today, a quiche with spinach without embellishment, just spinach (yeah otherwise it’s not really a quiche with spinach !!!), cream, eggs, and a pastry house (or not!).
The longer will be the same when well wash the spinach but as I am a purist of spinach (yes, it exists !), I can tell you that it is still better than frozen !!!

Quiche with spinach
Ingredients (for 1 quiche)
- 700 g fresh spinach
- 300 g heavy cream
- 3 eggs
- Of a nutmeg grated
- Salt and pepper
For the pastry
- 200 g of flour
- 80 g of butter
- 1 egg yolk
- 2 tbsp water
- 1 pinch of salt
Preheat the oven to 190° by the sole.
Prepare the shortcrust pastry by mixing the butter pieces with the flour and the salt, sand everything well and add the egg yolk. Continue to work the dough and add the water (you may need a bit more). Let dough rest in a cool 30 minutes
Meanwhile wash the spinach and blanch for 4 minutes in boiling salted water. Drain well and snip them coarsely.
Beat the eggs in omelet, then add the cream, nutmeg and season with salt and pepper.
Lower the dough on 3-4 mm of thickness and then lay it in a pie pan, trim the edges with a knife and prick the bottom with a fork.
Place the spinach on the bottom of pie and then pour the cream over the top.
Bake for 25-30 minutes, until the quiche takes a beautiful golden color.
