A small salad all fresh and dietetics to enjoy the sun that you said ? The bitterness and the sweetness of the grapefruit, the avocado for the creaminess and the crunch of the quinoa, a perfect alliance. I even managed to eat at Mr. grapefruit, he who hates it !!! Then be convinced ?!

Quinoa salad with avocado and citrus

Ingredients (for 2)

  • 1 small glass of red quinoa
  • 1 grapefruit from Florida
  • 1 orange
  • the juice of half a lemon
  • 1/2 ripe avocado
  • 1 tbsp olive oil
  • 1 c. c. of sesame paste
  • a few sprigs of chives
  • salt and pepper


Cook the quinoa as indicated on the package, usually 12 min in salted boiling water, drain and leave to cool.

Peel the citrus (orange and grapefruit), bright and lift up the breasts and press the rest to keep the juices and set aside.

Peel the avocado, cut it into cubes and drizzle with the lemon juice.

For the sauce, extract the juices of citrus fruits and then add the olive oil and the sesame paste and emulsify the whole. Add the chopped chives, then season to taste.

Mix the quinoa, avocado, and citrus fruits and serve with the sauce.
