This is the end of the summer or rather the beginning of the fall and summer squash still abound in the gardens so why not ?!

To change a bit of the ratatouille classic, I have created a ratatouille of zucchini with carrots, tomatoes and mint, to eat hot or cold depending on your mood.

Ratatouille of zucchini

Ingredients (for 4)

  • 5-6 small zucchini
  • 4 tomatoes
  • 2 large carrots
  • 1 large onion
  • 2 cloves of garlic
  • 1/2 bunch of fresh mint
  • 1 pinch of chilli powder
  • A drizzle of olive oil
  • Salt and pepper


Wash and cut all vegetables into small cubes.

Pour a drizzle of olive oil in a casserole and sauté over low heat the chopped onion and the cloves of chopped garlic. Then add the other vegetables except tomatoes, stir well and let it cook for 5 min.

Add the tomatoes, chilli and then season to taste.

Cook over a low heat and cover for 30-35 minutes.

Snip the mint and add it when the cooking is completed.
