I made this dish for a romantic dinner date, and the Mister was filled.
So why not try it for new year’s eve !
Rump of veal, cream, garlic, rosemary and mashed potatoes
Ingredients (for 2 pers.)
- 2 slices of rump of veal (or the nuts)
- 5 potatoes
- 20 cl of milk
- 30 g of butter
- 1/2 head of garlic
- 15 cl of fresh cream
- 1 branch of rosemary
- Salt and pepper
For the mash, cook the potatoes without peel for 30 min (depending on size).
During this time peel the garlic cloves and blanch for 30 min, changing the water in the middle of cooking.
Pass the potatoes to the mill to puree.
Put the cream has heat with the rosemary sprig, bring to a boil and then shut down the fire to let infuse.
Put the puree in a saucepan and add the milk previously heated, and the butter in pieces, season with salt and nutmeg and set aside warm.
Drain the garlic cloves, add the cream and rosemary (after having removed the stalk), and mix to obtain a smooth consistency, then reserve it warm.
Heat a knob of butter in a pan and cook the meat 2 minutes on each side, season.
To prepare, make a disc of mashed potatoes, add the meat and the cream of garlic.
