We’re in the middle of the season of the coco de Paimpol, but I am sure that you did not think the beans to your menus this weekend. Well, I intend to make you change your opinion with this small seasonal salad for which you’ll need from little things (the class what !). Good tomatoes, cute little zucchini and an onion costs make up this light salad and nourishing.

Then the coco de Paimpol, it tempts you in a salad ?!

Salad of coco de Paimpol, tomatoes and zucchini

Ingredients (for 4 people)

  • 750 g of cocos de Paimpol (weight of non shelled)
  • 300 g of cherry tomatoes
  • 2 small zucchini
  • 1 onion fresh
  • 1 drizzle of olive oil
  • The juice of half a lemon
  • Salt and pepper

Description

Écossez the beans and put them to cook in boiling water for about 30 minutes (taste to see if the consistency is good because the cooking time may vary). Drain and let cool.

Wash and cut the cherry tomatoes in two.

Wash and cut the zucchini into small cubes.

Snip the onion cool.

Mix the beans, tomatoes, zucchini and onion, then season to taste. Add a drizzle of olive oil and lemon juice, stir and it is ready !
