Each time that I go to my sister’s house in Mende, I took the opportunity to buy a good package of green lentils du Puy from local producers (yes, I know, Mende it is not the Puy but it is only an hour and it is on the road !). With these lenses, I we concoct good small dishes, such as this simple salad with an egg well is flowing down from above…

You see, it doesn’t take much to make me happy ! And you ?!

Salad of green lentils of Puy and egg mollet

Ingredients (for 2)

  • 120 g of green lentils of le Puy dry
  • 2 organic eggs or outdoor
  • 1 tomato (or not !)
  • 1 shallot
  • A little bit of chives
  • Some petals of dried flowers
  • Olive oil
  • Vinegar honey
  • The gomasio


Cook lentils the time indicated on the package. Drain and leave to cool.

Snip the shallot and chives. Cut the tomato into quarters.

Mix together the lentils, the tomatoes, the chives and the shallot.

For the dressing, mix a little olive oil with the vinegar, honey, add the gomasio and pour over the salad.

For the eggs, boil water in a pan, first a full, rolling boil cook the eggs for 4 minutes 30. Écalez-and serve on the salad.

Sprinkle with flower petals and a bit of fleur de sel.
