The vegetables of spring are not yet well developed on the stalls of the markets, but the early potatoes are emerging, like last week in my vegetable basket. So what better way to eat them is simply because a good salad ?! In addition I love the potato salad and it is true that it is even better with these smaller varieties of vegetables.
Mushrooms, potatoes and fresh herbs to finally start to have fun with salads !
Salad, potato, vegetables, mushrooms and herbs
Ingredients (for 4)
- 400 g of potatoes
- 5 mushrooms of paris
- 1/2 bunch of chives
- 1/2 bunch of parsley
- A drizzle of olive oil
- 1 tbsp apple cider vinegar
- Salt and pepper
Cook the potatoes in the English and then let them cool. Peel them (or not) and cut into pieces.
Wash and cut the mushrooms into strips.
In a bowl mix the vinegar with a drizzle of olive oil, season to taste. Mix with the mushrooms and the potatoes.
Snip finely the herbs and add to the salad.
