But what idea is passed by the head to eat the salad of watermelon with herbs, cheese and olive oil ?!!! Yes I know… but the watermelon in savory version is just awesome ! This salad fresh airs of the middle east and all the ingredients blend beautifully. Halloumi, you know ?! No ?! Good, it will be necessary to address it because this cheese is just fabulous, I love its texture a bit rubbery once grilled, it is necessary that you all enjoy it ! It’s just going to have to find a good grocery store of the mediterranean !

The summer is not finished yet and the season of the watermelon still beats to its full, enjoy therefore you put together this salad, which I’m sure will surprise you and bousculera your daily (well, yes, it changes carrots grated !).

Salad of watermelon to the herbs and halloumi, grilled

Ingredients (for 4 people)

  • 1/2 watermelon
  • 200 g of cheese-halloumi
  • 150 g arugula
  • 1 small bunch of mint
  • 30 g of pine nuts
  • 1 drizzle of olive oil
  • Salt and pepper


Cut the watermelon into quarters and then cut out triangles.

Mix the arugula, washed and mint leaves coarsely chopped.

Roast dry the pine nuts in a frying pan.

Serve the salad in a large dish, putting first the arugula, watermelon and pine nuts. Season with salt and pepper and a drizzle of olive oil.

Finally, cut slices of halloumi half a centimeter thick. Sauté them for 2 minutes per side in a pan with a drizzle of olive oil.

Add the halloumi warm over the salad and serve immediately.

This is a salad full of colours, good flavours, perfect for this late summer…
