Today, I wanted to put color in my plates because with the weather, some much-needed. Well, that is thing made with this recipe of semolina corn, butternut, roasted, pomegranate, and beef meatballs.

Semolina corn, butternut, roasted, pomegranate and beef meatballs

Ingredients

  • 250 g of cornmeal dry
  • Water
  • 1 tablespoon sesame seeds
  • 1/2 butternut squash
  • Chili powder
  • Olive oil
  • Salt and Pepper
  • 1/2 pomegranate
  • 1 hit of pumpkin seeds
  • FOR THE MEATBALLS
  • 200 g of meat-beef, chopped
  • 1 small onion
  • 3 tablespoons bread crumbs
  • 2 tablespoons chives, finely chopped
  • Salt and pepper
  • Olive oil
  • FOR THE SAUCE
  • 1 tablespoon of tahin (mashed sesame)
  • 2 tablespoons water
  • Salt and pepper
  • A few drops of lemon juice

 

Instructions

  • Preheat your oven to 200°.
  • In a baking dish, place butternut squash peeled and cut into cubes. Salt, add pepper, add a little chili powder and a sprinkle of sesame seeds. Drizzle with olive oil and bake for 40 minutes.
  • During this time, prepare the meatballs by mixing the ground meat with the chopped onion, the bread crumbs and the chopped chives.
  • Form 8 small balls with your hands and place them in another dish.Add salt and pepper and pour also a drizzle of olive oil. Put in the oven with the squash for 20 minutes.
  • For the couscous, follow the instructions on the packaging. Generally we pay the same amount of boiling water as couscous, and it’s expected that it swells up. Personally, I like the spend a few minutes in the frying pan at the same time I the details.
  • And finally, for the sauce, tahin, pour all ingredients in a small bowl and mix well.
  • Serve on individual plates, starting with the semolina, add the butternut squash, then the pomegranate seeds and squash. Add the meatballs on top and pour the sauce to your liking.
