The visual leaves you dreamer…(finally I hope), then I invite you to a poetic journey to discover my enchanted forest… A recipe a little different today, with a bit more precision and time than usual, to create a new entry in the visual, very eye-catching.

I presented you with my shortbread parmesan cheese it wasn’t so long ago that and they form the basis of this recipe, a basic shortbread parmesan with crunchy vegetables and a mascarpone cream slightly spicy. An entry for the great days, in any case, we loved it !

Enchanted forest of crunchy vegetables, mascarpone cream and frosted with parmesan cheese

Ingredients (for 2)

  • A dozen luminaries of cabbage romanesco
  • The heart of a salad escarole
  • A dozen beans
  • A few mushrooms, trumpets of death (optional)
  • A few shavings of cheese
  • Olive oil

For the mascarpone cream

  • 100 g mascarpone
  • 1 c. c. Espelette pepper
  • Salt and pepper

For the shortbread parmesan

  • 50 g of flour
  • 40 g of grated parmesan cheese
  • 20 g of demi-sel butter
  • 1/2 egg
  • 2 cl of water
  • Salt and pepper
  • 1 pinch of Espelette pepper

Description

Start with the shortbread, for this work the flour and egg and then add the butter and the parmesan cheese. Add the water gradually and season to taste. Have the dough about 1 inch of height in carry-parts of a ten centimeter in diameter and arranged on a baking sheet. Refrigerate 20 min. Preheat the oven to 200° and bake the shortbread for 12-13 minutes. Remove from oven and set aside.

Then do the mascarpone cream for this beat all the ingredients together to obtain a mixture that is aerated. Keep cool.

Care of you now vegetables, then blanch the tops of cabbage for 4 minutes in boiling salted water, then put in cold water to stop the cooking process. Do the same with the broad beans for 3 minutes and écossez after cooking. Sauté your mushrooms in a drizzle of olive oil for 5 minutes and set aside. Wash and separate the salad. Pass all the vegetables drained in a little olive oil.

Assemble (finally) your forest with the mascarpone cream on the sand to the inside of the circles about 1 little centimeter. Remove from pan then your circles.

Have then the vegetables in the forest, let your creativity guide you ! Finally, add a few shavings of cheese.
