Breakfast is the most important meal of the day and I’m not the first to say it ! Then I love to make breakfasts, house for Mr. and change them regularly so that it does not get tired. Fruits, cereals and honey for gluttony, these squares apple rhubarb are the perfect way to start the day (and not a slice of n….. !) and make the full of energy.

Right there on the spot I was hurt because I had to make love to Mr. the oatmeal…well, yes, because as he said the oats is for horses !!! But, there’s nothing to do with porridge, bran flakes stay crunchy…phew ! So I hope you’ll like it too !

Squares apple rhubarb oatmeal

Ingredients (for a square flat 20 cm)

  • 250 g of flour + 3 tbsp
  • 150 g of oat flakes
  • 130 g of sugar cane
  • 130 g of butter
  • 2 c. c. of cinnamon
  • 1 c. c. of salt
  • 1/2 c. to c. of baking soda
  • 3 apples
  • 150 g rhubarb
  • 200 g of honey


Preheat the oven to 200°.

Melt the butter and the sugar in the microwave, stir. Then add the flour, oats, cinnamon, salt and bicarbonate of soda. Mix well with a fork to obtain a dough crumbly. Pack 2/3 of the mixture into a flat square covered with parchment paper.

Peel and cut the apples into small cubes and then cut the rhubarb into small sections. Mix with the 3 tablespoons of flour and then put this mixture on top of the dough.

Top with the remaining batter and then pour the honey over the top.

Bake for 25-30 minutes.

Cut in a square shape after cooling and keep cool.
