A little stew to comfort us in the middle of the winter, it is always a good thing, especially since it is cold lately !

The daube is a stew of beef, often made with orange.

In addition it is good and easy to achieve, then your bitches !

Stew beef my way

Ingredients (for 4)

  • 800 g of beef bourguignon (scoter)
  • 75 cl of red wine
  • 20 cl of broth of beef
  • 2 carrots
  • The juice of 2 oranges
  • The zest of an orange
  • The zest of a lemon
  • 1 onion
  • 3 branches of fresh rosemary
  • A few leaves of sage
  • 1 c to s of tomato concentrate
  • 1 c to s of flour
  • 1 clove of garlic
  • Olive oil
  • Butter
  • Salt and Pepper


Slice the onion and put it in the sweating with the sage in a casserole dish with a drizzle of olive oil and a knob of butter for 5 min. Sprinkle with flour, and then stir.

Add the meat cubes, the carrots into pieces, the red wine, broth, tomato paste, 1 sprig of rosemary and the juice of the oranges.

Stir and let simmer for 2: 30 on a gentle heat, until the meat detaches when you press the key.

During this time, zestez the lemon and the orange, snip the rosemary and the clove of garlic and reserve this mixture.
Once the stew is cooked, sprinkle the mixture and serve immediately.

You can accompany the stew of pasta or potatoes in a dress of the fields.
