It’s been several times that there are a bunch of radishes in my basket of vegetables and although I love the crunch as is, I this time want to integrate it in a version very spring tabbouleh. I had proposed the version “classic” of tabbouleh last year and, more recently, the lebanese tabbouleh but there is a bit of a version which has nothing to do.

No tomatoes or cucumber in this recipe but radishes, spring onions and lemon thyme. I don’t know if you have already tasted the lemon thyme, but personally it is probably my favorite…it has such a smell…hmmm !!!

It is good, it is crisp and it is fresh, perfect to start the summer !

Tabbouleh spring radishes, spring onions and lemon thyme

Ingredients (for 4-6 people)

  • 375 g of semolina couscous fine
  • The juice of three lemons
  • 10 cl of water
  • 8 cl of olive oil
  • 1 bunch of radishes (round to me)
  • 2 onions cébette
  • 1/2 bunch of lemon thyme
  • Salt and pepper


In a bowl, pour the water, olive oil, lemon juice, and salt and pepper and then add the semolina couscous.

Wash and snip the lemon thyme and add to the bowl. Do the same with the onions and spring onions.

Wash and cut the radish into thin strips and then put them all in the bowl.

Stir well together and leave to swell in the fridge for 1 hour minimum.

Good tabbouleh !
